Meet Chef Roro

Odrige Roro Garat was born and raised in Haiti. In 1990, after graduating college, he could not find a job so he moved to St. Maarten and began training in hospitality at the University of St. Maarten. Chef Roro, as everyone knows him, did not choose hospitality because of desire at that time, but because hospitality classes were the most inexpensive and his brother was paying for them.
Roro then fell in love with culinary and anyone that has tasted his cooking is glad that he did. Nine months later Roro graduated from culinary school he started his first job at the Green House in St. Maarten. When he decided to leave the Island and move to the United States he first learned English and worked on the cruise ship Europa as a dishwasher. In 1997, the cruise line sent him to culinary school here in Fort Myers, FL. Later that year, the cruise line promoted him to Galley Sous-Chef and he was soon promoted to Executive Chef. When on leave from the cruise ship, he was working part-time at The Dunes as a houseman. When the ship changed ports, he was newly married, so he chose to stay in the Ft Myers area. When The Dunes needed a line cook he was promoted immediately. Chef Roro moved up through the ranks to become Executive Chef by 2004. He has lead his culinary team at The Dunes to win awards on Sanibel for his steak and seafood dishes. Chef Roro is passionate about food and beverage from all over the world and incorporates traditional American and Island cuisine to make Rassa one of the top restaurants in Lee County.
